One day, tucked in alongside soy sauces, black vinegar, and fermented tofu, I found something intriguing: a Sicilian orange extra-virgin olive oil labeled Agrumato. The resulting citrus oil was a rustic product that wasn’t sold, just used at home by the family. Her father Francesco and uncle Lino decided to turn this lemon oil into a new, marketable product. They started producing their oil using a similar method in 2000, involving various olives and fruits native to Sicily. Whims and her chefs finally settled on a drizzle of the lemon Agrumato, which added the perfect pop of lemon flavor they were looking for.
