Piper Sonoma is Piper-Heidsieck’s California venture, boasting spectacular sparkling wines at a fraction of its French cousin’s prices. I tend to like a drier champagne or sparkling wine, but some folks don’t, and this is a nice balance — it’s not mouth-puckering, but certainly not sweet either.

Sparkling wine can be a little difficult to nose as you may find bubbles shooting up your nostrils, but if you can get a sniff in, you’ll detect hints of citrus. On the palate it is crisp and fresh, with hints of lemon and cream and an almost nutty finish (really, I just wanted to use “nutty” as an adjective to describe a wine). Drink this alone, as an aperitif, or with a seafood dish. Or poultry. Or pasta. Or in your shower. Or upside down. Or through an IV
