Again, as with many French whites, you’re not going to get the entire essence of this wine in the first few seconds of a sip. The beauty of this wine is in its understated elegance.

If you’re used to drinking heavy, oaky Chardonnays from California, you’ll find it hard to believe that this wine comes from the same grape that yields the buttery California Chards. This is mild up front, and finishes with pear, green apple, lemon, and chalk (this is actually a good thing in wine). You’ll detect a slight hint of oak, but it enhances, rather than overwhelms, the wine.

This could pair with literally hundreds of different dishes, but you might consider poultry, hearty pastas, risottos, and even pork.
