Lime-Apricot Tofu

Bright, citrus-y flavors in an ultra-healthy main dish

This recipe, adapted from River Road Recipes 3, puts a vegetarian twist on a healthy entree. Serve with stir-fried snap peas, peppers, or other bright, crunchy vegetables.

Ingredients:

  • 1 lb. firm tofu
  • 2 limes
  • ½ cup apricot preserves, reduced or no-sugar-added preferred
  • 2 Tbsp. fresh ginger, peeled and minced
  • 1 Tbsp. soy sauce, reduced sodium preferred

Instructions:

  • Preheat oven to 450 degrees. Drain and press tofu (see helpful hints here).
  • In a bowl, grate peel from one lime and squeeze in the juice from both. Combine with preserves, ginger, and soy sauce.
  • Slice tofu into 1/2" slices and lay in baking pan. Brush with lime-ginger-soy mixture.
  • Bake for 15 minutes. Serve immediately.
