The journey started fifteen years ago: Faced with a daughter who developed a severe milk allergy as a toddler, I began seeking, tasting, and testing plant-based dairy products. For many years, it was that plant-based dairy largely failed to mimic the real thing in terms of texture, taste, and/or performance in cooking and baking. Plant-based dairy is now as mainstream in American supermarkets as the stuff from cows, and it’s among the fastest-growing food categories worldwide. Here in America, the plant-based dairy market grew nearly 30% in the last decade. The most common ingredients you’ll find in vegan dairy include coconut, coconut oil, tree nuts, oats, rice, olive oil, and avocado oil.
