This prawn salad is one of our favourite things to throw together. It takes literally 10 minutes to put together but thanks to the zingy dressing and fresh ingredients, it feels like so much love and attention has gone into it. While prawns are the main ingredient, courgette ribbons, fresh avocado, lettuce, watercress and fresh herbs make up the rest of this salad - but the star of the show is the dressing, which can be blitzed together and drizzled over.

Ingredients For the dressing 150 g sundried tomatoes in oil 10 g basil 250 ml water 1 tbsp. red wine vinegar 1/2 tsp. salt 2 tsp. honey 1/2 tsp. onion powder 1/2 tsp. garlic powder 20 ml olive oil For the salad 1 little gem lettuce, leaves separated 100 g watercress 15 g basil leaves, ripped 10 g roughly chopped parsley 20 g chopped coriander 1 courgette, topped and tailed, ribboned 1 avocado, cubed 300 g cooked king prawns This ingredient shopping module is created and maintained by a third party, and imported onto this page.
