Image zoom Pictured: Chef John's Make-Ahead Turkey Gravy | Credit: Allrecipes MagazineHow to Make Turkey Gravy from DrippingsIngredients:4 cups turkey broth, chicken broth, water, or a combination of broth and water1/4 cup reserved turkey fat1/2 cup water, wine, turkey stock, or chicken stock1/4 cup all-purpose flourSalt and pepper to tasteOptional: fresh chopped sage, pinch of cloves, a sprinkle of thyme, and/or a touch of maceStep 1: Make the base. Heat 4 cups of turkey broth, chicken broth, or water--or a combination of broth and water--in a saucepan until hot but not boiling. This will be used as the base of the gravy; you'll be adding thickened turkey drippings (roux) for your final gravy. If you're roasting a turkey, use the drippings from the roasting pan and turkey broth to make the gravy.
