Virginia Grilling & Wine Courses with Joe David
Food author Joe David, Savannah chef Joe Randall, and chef Howard Foer of Casanova, VA, will hold interactive cooking classes this summer in Virginia’s wine district.
The “gourmet getaway” classes are designed to provide tips and techniques for creating recipes and give students an opportunity to learn about pairing the state’s wines with food.
The first course will be held at Loudoun Valley Vineyard in Waterford, VA, on Saturday, August 1 from 11:00am to 3:00pm. It will feature instruction on grilling techniques for chicken, ribs, quail, vegetables, and other traditional foods, and Chef Randall’s special barbeque sauce.
The second class will be held at Philip Carter Winery on Thursday, August 6, from 6:00pm to 9:00pm. Chef Foer will demonstrate why non-traditional wine-food pairing is often recommended when sauces are added to food, using a menu that includes:
-
English Pea Broth with Virginia-Grown Poached Vegetables and Heirloom Tomatoes
-
Rabbit Terrine with Sauce Rémoulade Moutarde and Homemade Pickles
- Quick-Seared Medallions of Moulard Duck Breast with Port Wine and Bittersweet Chocolate Sauce
