The Infamous Bacon Explosion
Perhaps you saw the NYT piece. Perhaps you’re a savvy backyard barbecue chef who’s already given it a whirl. Or perhaps you find yourself strangely drawn to any dish with the word “explosion” in the title. Regardless, read on.
There has been plenty of virtual ink devoted to the Bacon Explosion since it bust onto the guy-food scene around Christmas. Others have done better in explaining its origins, so I’ll leave it to the dudes in charge to speak with authority and enlighten anyone in need of the backstory.
My bacon-worshipping household attempted the feat this weekend, with stellar results. Sure, there were things to be tweaked next time — more bacon in the center, more glaze on the bottom portion of the roll — but we were certainly in agreement that there would be a next time. Soon.
It’s a fairly self-explanatory process when told in photos. Behold:
The bacon weave.
Seasoned up, ready for the sausage layer.
Hot Italian sausage, with some yellow onion for good measure.
Pre-cooked honey bacon for the center.
All rolled up and ready for the grill.
We were thrilled with the scent that hit us upon tearing into that foil. It had smoke, toffee, caramel, coffee and hickory notes that, as one observer put it, “smelled like a real barbecue joint down South.”
Suggested pairings: cold beer. Scrambled eggs when you have the leftovers for breakfast the next morning. Lipitor.

February 9 1:48 p.m. 6We tried this for a brunch that we hosted for eight people. It was a huge hit! Our guests raved about it for days afterwards. I was afraid to cookit, fearing that I would have an MSG hangover after eating, but I felt surprisingly fine afterwards.

Glad to see that others are as mesmerized by this contraption as we were. As Corey pointed out, Diet Coke with Bacon is probably the only thing you would bother serving alongside. Perfect.

February 11 4:06 p.m. 8We tried two versions on Super Bowl Sunday, cooking them on a Big Green Egg smoker.
One used thick-cut bacon for the weave and the other used medium-cut. We also tweaked it a bit by using a sweeter (apple and green onion) sausage mixture in the interior.
Truth be told? It was good, but none of our guests really thought the whole was better than the sum of its parts.
